I’m convinced zoodles are a magical present from the universe. They are VEGETABLES. That you can turn into a PASTA-LIKE dish. And can mix with ANY SAUCE OR TOPPINGS. And have almost NO CALORIES. And are seriously DELICIOUS. My spiralizer is my favorite thing in my kitchen and you best believe that zoodles are a weekly meal in my household. You can eat them just as you would any pasta dish — simple, with butter and parmesan, old-fashioned, with marinara and meat sauce, or in this case, spicy in a lip-smacking peanut sauce. It’s delish. It’s spicy. It’s lit.
What you’ll need:
•2 large zoodles, spiralized
•1 package ground pork
•1 small onion
•Minced garlic (eyeball this)
•Peanut butter (eyeball this)
•Soy sauce (about half the amount of peanut butter)
•Coconut milk (eyeballed, and optional)
•Water
•Cayenne pepper
•Salt/pepper
Heat some olive oil in a large pan or skillet, brown the pork with the diced small onion, season with salt/pepper/garlic to taste, and set aside. In the same skillet, sauté the zoodles for about 3-5 minutes, and combine with the browned pork.
In a separate bowl, combine peanut butter, soy sauce, coconut milk (if using for taste), water, and cayenne pepper. Stir until all ingredients are mixed together and add water until sauce reaches desired consistency (this works best if you thin it out to the consistency of salad dressing!).
Pour sauce over combined zoodles and pork, and enjoy! If you want even more spice, drizzle some sriracha over the dish and have at it.
