If you’ve never treated yourself to a bowl at sweetgreen, you’re missing out. Big time. No, I am not being paid to write this - their bowls are just that good. But… Eating out all the time makes my wallet want to curl up in a corner and cry, so my boyfriend has been using his fave lunch spots as inspiration for meal prep lately. Let’s just say that after he made this one, we’re pretty sure we have a new favorite for meal prep options. It’s protein packed, incredibly flavorful, and all around good-for-you-and-your-soul. What you’ll need (recipe is for entire bowl, which we later portioned out for individual lunches):
•Cooked chicken breasts, cubed (1 breast per meal)
•Fresh kale, chopped (about a few cups per meal)
•1 can garbanzo beans (you can sub or add sweet potatoes to your liking)
•1 box wild rice
•Red onion, diced (eyeball this)
•Apples, cubed (about 1/2 apple per meal)
•Toasted almonds (eyeball this)
•Shaved parmesan flakes (you can sub goat cheese)
•Salt/pepper/garlic powder (to taste)
•Balsamic vinaigrette (or just some balsamic vinegar mixed with olive oil)
Preheat oven to 400. Grease an oven-safe dish, drain the garbanzo beans, pat with a towel to dry them off, season with salt/pepper/garlic, and once oven is preheated, roast beans for 20 minutes. While they’re roasting, follow boxed rice directions and once rice is cooked, set aside to cool.
In a large bowl (I mean LARGE. The biggest you can find in your kitchen), combine the chicken, chopped kale, red onion, apples, toasted almonds, and parmesan flakes. Once the garbanzo beans and rice are ready, add to the bowl and mix it all up. Drizzle some balsamic vinegar onto the bowl, mix, taste, and add more if necessary. Season to taste. Note that too much balsamic will ruin this, so add less than you think you need and taste as you continue adding! Don’t ruin your bowl! Once everything is mixed well, divide into meal prep containers and proceed to make all your coworkers v jealous with your amazing bowls.
