That's right, folks - I did it. I finally made filet mignon. After numerous grocery trips eyeing this oh-so-tasty yet oh-so-expensive cut of meat and turning away, my boyfriend finally said screw it and got us some filet mignon steaks. And damn, they were good. Acceptable to bug him to get more of these...? I mean, he got fed too.
What you'll need:
•Filet mignon cuts - I used 2 (one for my boyfriend and I), but really this number depends on how many of these you think you could chomp down in one sitting. Best of luck!
•Steak sauce (I like Al's)
•Extra virgin olive oil
•Grated parmesan cheese
•Minced garlic
•Seasonings: I used parsley, garlic powder, salt and pepper
Preheat the oven to 450° and heat up an iron skillet on the stovetop. Pat down the filets so that they are dry, and rub a mixture of a little (keyword: little, otherwise it'll burn) steak sauce and chosen seasonings onto each. I use a silicone brush to do this with meat. Once the skillet seems hot enough, place each filet down and sear each side for about 2-3 minutes. DO NOT MOVE IT UNTIL YOU FLIP IT. This will be tempting. It will start to smell good. DO. NOT. TOUCH. Make sure to sear the sides, as well!
Once the oven is preheated and all sides of the meat are seared, transfer onto a pan lined with parchment paper and stick into the oven. See below for approximate cook times based on how you like your meat:
~8 minutes: Rare
~12 minutes: Medium Rare
~15 minutes: Medium Well
~18+ minutes: Well Done (also, you're an ANIMAL and wrong)
While the meat is cooking, combine the olive oil, parmesan and minced garlic into a bowl. I also added parsley (again, for the look, because I can't taste this as a seasoning. Idk, it looks all culinary and beautiful). Once you take the filets out, immediately pour this mixture over each one and let cool slightly. Serve with potatoes, rice, or my favorite - arugula salad!
