The kind for lazy people.
That's right, folks - as much as I adore cooking, I don't adore doing it every day. My boyfriend and I recently adopted a puppy too, so as you can imagine, cooking all day err' day just isn't happening. But yesterday, something bad happened. I got hit with a huge craving for beef stroganoff, of all things. And it was on a night where we were waaay too busy. Enter the Lazy Girl's Beef Stroganoff. Did I use fancy cuts of meat? Nope. Ground beef for the win. And let me tell you - while this dish isn't necessarily the most photogenic, it's DAMN good. And takes under 30 minutes to make.
What you’ll need:
•1 package ground beef
•1 package baby bella mushrooms
•1 shallot
•Minced garlic (eyeball this)
•Flour (I'd guess I used a few TBSPs)
•Beef stock (about 1/4 cup, I eyeballed as usual)
•Sour cream (eyeball this)
•Paprika, salt, pepper
Dice the shallot and slice the baby bellas (remove the stem first). Heat a large skillet with olive oil and brown the beef with the shallot and mushrooms until meat is cooked through. Add garlic and cook until fragrant (less than a minute). Season the meat with paprika, salt, and pepper.
Stir in flour until cooked through, then add the beef stock and stir until all ingredients are blended together in the skillet. Finally, remove skillet from heat and stir in the sour cream. Mix until combined, and add any seasonings as needed (I found I still needed a lot of salt).
Season with parsley and serve over noodles, cauliflower rice (like I did!), or eat it plain.
