If you're like me and you frequent Pinterest for dinner inspiration, you end up perusing multiple variations of using this deliciousness called spaghetti squash. If you haven't ever made a spaghetti squash dinner, you need to shut down your laptop two minutes ago, march to the store, pick a few of these bad boys up, and stick 'em in the oven. Okay, off you go! Bye!
What you'll need:
•Spaghetti squash
•Onion
•Ground turkey
•Pasta sauce
•Your favorite shredded cheese
Start with preheating the oven to around 350. Poke some holes around the diameter of the squash, and pop into the microwave for about 5 minutes. Once that is done, let cool, and slice through the middle. Scoop out the seeds (this part sucks, but the rest is great, I promise), drizzle with some olive oil, and place face down into a greased sheetpan. Bake for around 40 minutes.
Throw the ground turkey in a large, deeper skillet or pan. Ground turkey is leaner than ground beef, and you really can't taste the difference after you've added the sauce - but, if you're old-school, you can absolutely substitute in some beef! If you're vegetarian, I'm sorry I had you read this paragraph with no warning. Ignore this part.
Once the meat is nearly browned, cut up some onion (I would recommend yellow/sweet onion for this recipe, but, as I mentioned in my last post, onions are amazing and you can choose your favorite) and add to the meat. Stir together until the meat is fully cooked and the onion has softened.
Add a jar of pasta sauce and stir together. Once the spaghetti squash is done, remove from oven and scoop the sauce mixture into the middle of each boat. Sprinkle with some (or, a lot of) the cheese, pop back into the oven, and broil on high for around 10 minutes. Nom! Enjoy your new favorite non-pasta pasta!
