Do you like appetizers? Because I like appetizers. No - I love them. Appetizers are the reason why I love food so much. Finger foods, dips, crackers, cheeses - man. Thinking about apps just really gets me GOING. When get-togethers involve snacks, I’m always the person looking around the room, assessing whether it’s yet socially acceptable for me to get up and go fill my plate for a 5th time. And for the sake of having another of these cheesy stuffed mushrooms, I’d fill it a sixth.
What you’ll need:
•1 package baby bella mushrooms
•1/4 container cream cheese
•Fresh spinach (a few cups)
•1/4 container feta crumbles
•Minced garlic (eyeball)
•Salt/pepper
•Sprinkle of parmesan cheese
•Diced artichokes (optional)
Preheat oven to 350. Cut all stems off of the baby bellas, but do not discard - you’ll be using them! Line all bellas opening-up on a sheet pan and drizzle with a bit of olive oil. Take the stems, chop them up as finely as you can, and set aside.
In a skillet, wilt your spinach until it’s entirely softened. Reduce heat to a simmer and add in cream cheese, feta crumbles, chopped mushroom stems, and artichokes (if using). Sprinkle in some salt and pepper to your liking, and stir until the mixture is fully melted.
Once it’s done, scoop a spoonful of the mixture into each mushroom cap, and bake for 15 minutes. Remove from oven, sprinkle parmesan on top of each cap, and bake for 5-10 minutes more, or until the parmesan browns. Serve as an appetizer or a side dish with a lean protein like chicken!
