Lemon-garlic Salmon

When I first made salmon, I was astounded at both how easy cooking this fish was, and how gourmet it looked when I put it on a plate. I then dubbed myself as Chef Kay. That won me a lot of probably-deserved crap in college, but damn, this dish was good. The entire process takes maybe 20 minutes which means less time slaving away and more time enjoying something equally as delicious as it is healthy. Fish, yo. It's good for you.

What you’ll need:

•Salmon filets - I suggest buying them fresh from behind the counter

•Butter (you can totally substitute olive oil)

•Minced garlic

•Parsley

•Lemon juice

•Salt/pepper

Preheat the oven to around 350 and line a sheet pan with aluminum or parchment paper. Cut up the filets if necessary and line them on the sheet.

In a separate bowl, mix the butter or oil with a spoonful of the garlic, lemon juice, and parsley. Stir using a pastry brush (I use a silicone one, as they are waaay easy to clean), spread this mixture onto each side of the filets, and pop into the oven for around 20-25 minutes.

I love to pair fish with a simple arugula salad — keeps the flavors light and fresh!
