Ahh, meatballs. I know that feeling. That feeling of “I could REALLY go for some spaghetti and meatballs right now. Saucey ones. Meaty ones.” I will challenge you, though, to think outside the box here. Yes, you can go out and buy a jar of secretly sugary pasta sauce and it’d be fine. But you can also take 5 minutes - yes, 5 - to make your own homemade cauliflower coconut sauce that you’ll want to put on EVERYTHING. Including your meatballs. Don’t say I didn’t warn you. Did I mention this was dairy and mayo free?
What you’ll need for the meatballs:
•1 package ground beef
•1 package ground pork
•1 egg
•Minced garlic (eyeball it)
•Any spices you’d like to use (eyeball them)
•Salt/pepper
Preheat the oven to 400 degrees and line a pan with parchment paper or foil. In a bowl, combine all above ingredients together. Oil up your hands (I use olive oil) just enough so that the mixture won’t stick to them, and go to work. Make sure alllll of the ingredients are mixed well together. Once the oven is ready, form little meatballs with your hands and plop them onto the pan. Bake for 20-25 minutes, or until browned.
What you’ll need for the Cauliflower Coconut sauce:
•Cauliflower rice (about half a bag of the pre-shredded stuff, or 1 cup)
•1/2 can coconut milk
•Nutritional yeast - 1/4 to 1/8 cup (I use this kind, avail at Whole Foods)
•Minced garlic (eyeball)
•Lemon juice, 1/2 to 1 whole lemon
•Salt/pepper
Blend the above ingredients in a vitamix or high-speed processor until it has the consistency you are looking for. To thin out, add coconut milk or water. To thicken up, add cauliflower rice.
NOTE: If you don’t vibe with coconut, you can substitute almond or soy milk!
Once the meatballs are done, let them cool, then serve with sauce and fresh chives on top. Once those are done, load up another plate and repeat. You will look for an excuse to eat this sauce. I promise you.
