I’ve been incorporating a paleo-like regimen for a few weeks now, mostly because of the way it’s made me feel. Minimal bloating, boosted energy, and the food is surprisingly delicious and not without tons of options. Enter this glorious stuffed portabella. I licked my whole damn bowl clean. You won’t even miss your burger bun.
What you’ll need:
•1 package ground meat of choice
•A few shallots
•Large portabella caps
•Olive oil
•Nutritional yeast
•Minced garlic
•Salt/pepper
Preheat your oven to 400, and start browning your chopped shallots with your garlic and ground meat. Take the portabella caps and cut off the stems. I also like to scoop out the black gills on the inside, but that’s an optional step. Drizzle some olive oil and salt on them, place open side up, and roast in oven for 20 minutes.
As your meat is getting close to ready, season it with whatever spices you’d like. Once the portabellas are done, scoop the meat mixture onto the inside of the cap and sprinkle nutritional yeast on top (instead of this, you can also try fresh chopped onion or parmesan cheese for the non-paleo folk).
I served this with waaay too much sriracha (my mouth was screaming help the entire time), but damn was this tasty and SO filling! A unique take on burgers? Sloppy Joes? Not sure - but this was delicious. Pair it with a nice summer salad or mashed potatoes!
